bone in goat leg 2-3lbs
1/2c lemon juice
1 medium onion, finely chopped
2 garlic cloves, minced
1 inch piece of garlic, peeled and grated
1 hot chili pepper finely chopped (2 if you like spicy)
1 tsp cumin
1 Tbsp turmeric
4 oz tomato paste
1 1/4c stock
2 Tbsp garam masala
Marinate the goat leg with lemon juice and salt.
Melt the butter in a large sauce pan. Cook onion, garlic, ginger and chili in the butter for two minutes. Add coriander, cumin, turmeric, and pepper.
Add the leg and cook for five minutes on each side to brown the outside. Add tomato paste and stock. Cover and simmer for 30 minutes or until meat is cooked through.
Sprinkle in garum masala and cook for 10 more minutes. Serve with basmati or jasmine rice.
